Mother’s day menu ideas for celebrating that special woman in your life, near or far.

Everyone has that dish that takes them straight back to their childhood. Maybe it’s a Sunday Roast, smothered in gravy with all the trimmings. Or a tried-and-tested family curry recipe passed down through generations. Perhaps it’s a steaming hot apple pie that reminds you of afternoons spent baking in the kitchen with a loved one. 

Whatever it is for you, food has a way of connecting us to people. For many of us that time spent preparing food with our mothers (or mother figures) helped to form precious memories to treasure over a lifetime.

Mother’s Day Meals with Mum in Lockdown

This Mother’s Day, many of us will be away from loved ones, unable to sit down and enjoy a family meal together. Perhaps this year you could show your mum how special she is to you by preparing that favourite family dish for her. Pop it on her doorstep with a bunch of flowers. 

If you’re not local enough to deliver a meal, you could set some time aside for a video chat and prep the meal together virtually. You could even arrange for the ingredients to be delivered to her so that you can both prep and eat the same meal together even though you’re miles apart. There’s nothing like a good, hearty meal to bring people together.

Mother’s Day Menu Ideas

In honour of all those special women in our lives, here are some of our favourite Mother’s day meal ideas that take us straight back to childhood memories of cooking with mum.

Sweet Potato Spanish Omelette

Ingredients:

  • 1 tbsp. olive oil 
  • 1 cup (130g) sweet potatoes, peeled, diced 
  • 1 small onion, chopped 
  • ½ red bell pepper, chopped 
  • 1 cup (70g) mushrooms chopped 
  • 2 handfuls spinach, chopped 
  • 4 eggs, beaten 
  • ¼ cup (35g) feta cheese, cubed 

Method:

To start with, preheat your grill to a medium-high heat. 

Then heat your olive oil in a medium ovenproof frying pan and fry the sweet potatoes for 3-4 minutes, until they start to soften. 

Add the chopped onion and fry for a further 2 minutes, then add the mushrooms and the pepper and stir continuously as they cook for another 3 minutes. Next, add the spinach and cook for 1-2 minutes, until the spinach has wilted.

Pour in the beaten eggs, carefully tipping your pan so that the eggs run evenly across the vegetables and cover the whole pan. Season with salt and pepper, then cook for another 3-4 minutes, until the bottom of the omelet starts to set.  

Sprinkle the cubed feta on top of the eggs and place the pan under the grill for about 5 minutes to cook the top. The omelette is ready when the eggs have completely set. Serve immediately and enjoy!

Simple Chilli

Ingredients:

  • 1 tbsp. olive oil 
  • 2 lbs ground beef
  • 1 large onion, finely diced
  • 1 tin of chopped tomato
  • Green chillies, chopped
  • 1 tin of beans - kidney, pinto, cannellini or haricot beans all work well
  • Rice

Method:

Heat the olive oil in a large soup pot. Add the onion and saute on a low heat for about 10 minutes until it goes slightly translucent. 

Add the ground beef and cook on a medium to high heat until the meat is no longer red in colour. Season with salt and pepper.

Next throw in the chopped tomatoes and as many green chillies as your tastebuds desire. Add the beans, along with a little water and simmer gently for about 30 minutes.

Give the chilli a little taste test, and add seasoning if you desire. You can now let it simmer away on a low heat until the consistency is to your taste (which can take anywhere between 30 to 60 minutes), and serve with a side dish of rice.

Slow Cooker Pulled Pork

Ingredients:

  • 14 oz. (400g) can diced tomatoes 
  • 1 tbsp. chili powder 
  • 1 tsp. cumin 
  • 1 tsp. salt 
  • 1 tsp. chipotle chili paste 
  • 1 tsp. garlic powder 
  • ½ tsp. onion powder 
  • ⅓ cup (80ml) apple cider vinegar 
  • ⅓ cup (113g) honey 
  • 2.6 lb. (1.2kg) pork shoulder 

Method:

Put all of your ingredients except the pork into the base of your slow cooker and stir. Then add the pork shoulder and turn a few times to thoroughly coat the pork in the sauce. Leave to cook on a low setting for 8 hours. 

Once cooked, place the pork shoulder in a bowl. Use tongs to remove and discard the fat, then shred the meat using two forks. 

Add cooking juices to the shredded pork, according to preference. Or simply return the pork to the slow cooker and mix well.  

Once cooled you can store the pork in an airtight meal prep container for up to 4 days.
